Cabernet Sauvignon is the product of a chance crossing between Cabernet Franc and Sauvignon Blanc. It is the most widely grown variety in the world and Australia’s third most planted grape variety. It’s the coldest region of Queensland with summer temperatures averaging 21 degrees and winter temperatures 8 degrees. Cool climate Cabernet Sauvignons have complex aromas and flavours, are well balanced with good length of flavour and have a natural acidity which brings brightness and freshness. Cool climate wines are often also better suited to match a wide range of foods due to medium bodied flavour profiles which complement your meal rather than overwhelm it.
