We have always basked in the experience that the Wild Ferment Viognier delivers. This variety is elegant and unique. Native to France, it grows incredibly well in the Granite Belt which has favourable conditions to nurture the growth of the grape to develop its full flavour. Once the grapes have been harvested, they are transported early in the morning to Tamborine Mountain.

As this is a Wild Ferment wine, indigenous yeast which has settled on the skins of the grapes is the only yeast used to ferment this wine. Matured in new and seasoned French oak to bring structure and complexity to the palate, the Viognier offers a silky finish. The Wild Ferment process makes it impossible to achieve the same flavours each year, resulting in each vintage being unique and delicious. 

When we consider what foods to enjoy with the Viognier, think Apricot Chicken Tagine with Saffron Rice as the apricot flavours compliment this wine beautifully. For cheese lovers, we’ve enjoyed this with a baked brie topped with apricots and honey. If you’re feeling like something vegetarian we suggest Teriyaki Tofu. When it comes down to it though, the Viognier can be enjoyed with your favourite meal because it is too hard to resist.
