This apricot brie is the perfect pairing for the Wild Ferment Viognier and it is very hard to resist! The warm brie is the perfect accompaniment to any cheese platter or is a delightful way to finish off a day.

 

Get your ingredients sorted:

  • 200g Brie wheel
  • 1 tbs Wild Ferment Viognier
  • 5 Diced dried apricots
  • ¼ cup Diced walnuts
  • 1 tsp orange zest
  • Pinch of nutmeg, cardamom and cinnamon
  • 1 tbs Honey

 

To create the baked brie:

1. Preheat oven to 180C

2. Unwrap the cheese and place in a snug fitting ovenproof dish making sure that the rind isn’t pierced. Rub a tablespoon of Viognier over the top before you score the cheese and fill with the apricots, walnuts and orange zest.

3. Top with a sprinkle of spices and bake at 180oC for 15 minutes. Once out of the oven drizzle honey over the top and serve with a glass of Viognier.
